We have seriously gotten the munchies this week and have been doing some cooking. Jenny’s favourite recipe at the moment is White Chocolate & Coconut Cupcakes and she has graciously shared cupcakes with us and the receipe with you
125 grams butter
3/4 cups sugar
pinch of salt
2 eggs
2 cups Self Raising Flour
3/4 cup milk
1 teas coconut essence
Cream butter and sugar till light and fluffy, add eggs one at a time fold in Self Raising Flour, Salt and Milk
Bake 160 for 15 minutes for small cupcakes
Icing
30 grams butter
1 1/2 cups icing sugar
60 grams white chocolate melted
1 tabs milk
1/2 teas coconut essence
Mix all ingredients together, ice cooled cakes and decorate with toasted coconut
